Cauliflower Tacos 

Let’s try a healthy twist on a universally loved dish! Cauliflower is an amazingly versatile vegetable that is low calorie, high fiber, and rich in sulfur-containing compounds known to protect against cancer and promote detoxification. Cauliflower in place of meat might sound weird at first, but you’ll be amazed at how delicious they are – even the pickiest eaters love them. This recipe is surprisingly easy to make. Bon appétit! 

Cauliflower 

2 Tbsp olive oil 
1 small onion, diced 
2 cloves fresh minced or crushed garlic 
1 red pepper, diced 
¾ jalapeno pepper, diced 
1 small head of cauliflower, roughly chopped 
2 tsp chili powder 
1 tsp smoked paprika 
½ tsp cumin 
1 tsp sea salt 
1 tomato, diced (or one cup canned/boxed diced tomatoes) 
Zest from ½ lime 
1 Tbsp fresh lime juice 
2 Tbsp chopped fresh cilantro 

Cabbage Slaw 

2 cups thinly sliced purple cabbage 
1 Tbsp sea salt 
Juice from half a lime 
¼ cup raw apple cider vinegar 
½ Tbsp sucanat or other natural sweetener 
2 Tbsp chopped fresh cilantro 

Pico de Gallo 

2 tomatoes, finely diced 
1 tsp sea salt 
1 clove garlic, crushed 
¼ jalapeño, diced 
¼ red onion, diced 
2 Tbsp chopped fresh cilantro 
Zest from half a lime 
Juice from half a lime 

To Serve 

12 small soft corn tortillas (ideally organic) 
1 fresh avocado, diced with a little salt and lime juice added 
Refried beans (homemade or from a BPA-free can) 

Cauliflower 

Heat oil in a large frying pan over medium heat. Add onion, and cook 5 minutes. Add garlic, red pepper, jalapeno, cauliflower, and spices. Mix together. Add tomatoes, mix and let cook 10 -15 minutes. Add zest and lime juice along with fresh cilantro. 

Cabbage Slaw 

While the cauliflower is cooking, make the cabbage slaw by adding the cabbage and salt to a large bowl. Stir and let rest 20-30 minutes. Add the lime juice, apple cider vinegar, and sweetener. Toss to coat. Sprinkle with cilantro. 

Pico de Gallo 

Mix all ingredients in a small bowl. 

To Serve 

Place cauliflower, refried beans, cabbage slaw, fresh avocado and cilantro in a heated corn tortilla, and fold it over. Enjoy!
